Apple Cake Delight - Serves: 6 people
Apple cake is just about everyone's favorite. This quick, attractive, and most importantly, delicious cake is sure to tempt your taste buds.
1 cup sugar 1½ cups self-raising flour 4½ oz margarine (melted) 2 eggs (beaten) 1 teaspoon cinnamon 3 apples (peeled, cored and sliced)
Mix sugar, flour and cinnamon together. Add the beaten eggs and melted margarine. Pour half the cake mixture into a well greased ring tin. Add the apples, then the remaining cake mixture.
Bake in at 350 over for 1 hour. Serve hot or cold.
Apricot Loaf – Serves 6 people
This apricot loaf is a great source of fiber and a tasty and filling snack. Great for those times when you need to snack on something nutritious.
¾ cup dried apricots (chopped & soaked in 1 cup water for 1 hour) 2 tablespoons melted margarine 1 cup sugar 2 cups self-raising flour 1 egg ½ cup orange juice
Combine egg and sugar. Add butter and other ingredients including the apricot water. Pour into buttered loaf tin. Bake in moderate 350 degree oven for 30 to 40 minutes. Cool and serve.

Date & Walnut Slice - Serves: 6 people
To ensure that you get all the nutrients you need during pregnancy, wise snacking is essential, especially if you're having trouble eating nutritious main meals. Dates and walnuts provide a good source of fiber, vitamins and minerals.
4½ oz margarine 1 cup brown sugar 1 cup chopped dates ½ cup walnuts 1¼ cups self-raising flour 1 egg
Press in greased rectangular tin. Bake in moderate oven for 20 minutes. Cut while still warm.
Easy Peanut Butter Cookies - Makes 4 dozen delicious and easy cookies.
1 cup peanut butter (smooth or crunchy) ¾ cup granulated sugar 1 egg
Mix the three ingredients together in a bowl by hand until thick and pliable. Roll batter into one inch balls. Place cookie balls on ungreased baking sheet. Gently flatten each cookie ball with a fork, in a criss-cross pattern. Bake at 350 degrees for 8 to 10 minutes, until puffed and golden.
Be very careful when removing these cookies from the baking sheet as they are really crumbly when hot!

Peanut Butter Cookies - Makes 48 cookies
¾ cup creamy or crunchy peanut butter ½ cup butter or margarine, softened ½ cup sugar ½ cup packed brown sugar 2 eggs 1½ cups all purpose flour 1 teaspoon baking powder
Preheat oven to 375F. In a large bowl with mixer at medium speed, cream peanut butter and margarine together. Beat in sugars and eggs until well mixed, occasionally scraping bowl. Stir in flour and baking powder until well mixed.
With hands, shape dough into 1 1/2 inch balls. Place the balls 1 inch apart on cookie sheets. Dip a fork into flour and press deeply across the top of each cookie; repeat in opposite direction to make crisscross pattern. Bake 8-10 minutes until cookies are lightly browned. Immediately remove cookies to wire racks. Cool.
Peanut Butter and Jelly Cookies Prepare dough as above and form into 1.5 inch balls. Place balls 1 inch apart on cookie sheets. Using a flat bottomed glass dipped in sugar, flatten each ball. Top each cookie with 1/4 teaspoon jelly; bake as directed.
